AMARONE VALPOLICELLA DOC 2004

Growing area: The vineyards are located in the Valpolicella DOC zone, particularly in the area of Val di Mezzane, Illasi, and Cazzano di Tramigna; the vines are planted in limestone soils, at elevations of 150-200 metres.
Training system: Traditional pergola veronese. Cluster thinning practised.
Harvest time: Hand picked, with careful quality-selection of the fruit, at the beginning of October. Only high-quality, perfectly-ripe clusters are selected.
Winemaking and maturation: The hand-picked clusters dry in special rooms under controlled temperatures for at least 3 months. The de-stemmed grapes are pressed, yeast is added, and the must remains in small tanks to ferment at low temperatures (10-14°C); the fermentation continues slowly for 25-30 days. When it is 2/3 complete, if the sensory characteristics are suitable, the partially-fermented must is drawn off and finishes its fermentation in steel tanks at 20°C. The Amarone is then racked and put into in barriques for at least 24 months to mature, before ageing a further 12 months in the bottle.
Appearance: Deep ruby red with garnet highlights.
Bouquet: Intense fruit with hints of cherry, black cherry, wild berry fruit, vanilla, raisins, and tropical fruit.
Palate: Full-bodied, warm, smooth, with well-balanced, velvety tannins and an impressively lengthy development.
Serving suggestions: Perfect for red meat, all types of game and ripe cheeses; enjoyable also as an after-dinner or conversational wine.
Best enjoyed at: 16-17°C in a large, red-wine crystal stemware. The wine is best decanted some hours before serving, to rid it of oxidative notes and to open up the bouquet.

Growing Area and Vineyard Profile:The Classico area of the Sant’Ambrogio commune hills.
Vineyard aspect: Southeast
Average altitude: 250/300 metres
Soils profile: Predominantly clay-shale and chalk
Training System and Planting Density:Guyot and pergola trentina, with about 3,000 vines/hectare.
Yield per hectare: 100 quintals
Harvest Period and Method: Mid third of October. Manual harvesting
Wine Production: After being picked and carefully graded, the grape clusters are placed in shallow wood trays for about 5 months, leaving space for air circulation around the bunches. After fermentation on the skins, the wine is divided into 300-litre French oak barrels and Slavonian oak cases for maturation of about two and a half years, followed by a year’s ageing in bottle before release.
Service – When and How: Serve at cool room temperature, uncorking the bottle at least one hour beforehand.
Serving Suggestions: The perfect wine for all roasts and game,
as well as for aged cheeses.

WINEMAKING TECHNIQUE: Grapes are harvested by hand at the beginning of October. Alcoholic fermentation takes place at a temperature of 25°C simultaneous with a brief eight day period of maceration in order to obtain a fresh wine. The wine, after alcoholic fermentation and malolactic fermentation passes the winter in steel tanks. The wine is bottled in March after it has achieved chemical and biological stability. It is refined in the bottle for about 1 month and then marketed.
Soil: Clay and limestone of alluvial origin , with a strong rock structure.
Vine density: 2500 vines/hectare

Cultivation: Trent small bower
Pruning: 14-18 buds/plant
Production: 10000 kg/hectare

DESCRIPTION OF THE WINE
Color: Strong ruby red.Clear and transparent.
Bouquet: Fresh and young with notes of cherries and red currants.
Flavor: Lively acidity, well balanced with its structure and alcohol content. The after-taste confirms the notes in the bouquet. A young Valpolicella wine, pleasing and elegant.
This wine can be preserved for 2/3 years even though it is a young and ready-to-enjoy wine.
Combinations: pasta, white meat, light meals in general.
Serve at 14°C.
AMARONE DELLA VALPOLICELLA DOC CLASSICO
The Amarone is a small jewel in our product line, made from outstanding corvina, rondinella and sangiovese grapes of the Valpolicella Classico zone, in the communes of Sant’Ambrogio, Negrar, Pedemonte, Fumane, San Pietro in Cariano and Marano.
After being picked into small, 2.5 kg trays, the grapes are cleaned and placed on drying mats for 4 months in dry, well-ventilated rooms.
In January they are finally crushed, then very slowly fermented on the skins; the wine goes into 300-litre French barrels and Slavonian oak barrels for maturation, followed by a year’s ageing in bottle before release.
A wine of superb richness and majestic flavours.
The exceptional balance of all its components makes it ideal for lengthy cellaring.
